Pink Oyster Mushroom (Pleurotus djamor): The tropical colorful mushroom

The pink oyster mushroom, scientifically known as Pleurotus djamor, is a tropical variety of the oyster mushroom family that immediately catches the eye with its vibrant coloration. This species originates from the tropical and subtropical regions of Southeast Asia but is now cultivated worldwide.

Visually, the pink oyster mushroom differs significantly from its European relative. The cap color varies from intense pink to bright red; some strains also display violet-reddish tones. This coloration is a natural characteristic and is most intense in young, well-lit fruiting bodies; it fades as they mature and during cooking. Those who want to emphasize the strong color should therefore harvest them while young. The shape is similar to the shelf-like structure of the classic oyster mushroom, but often somewhat more delicate and elegant.

Taste and Kitchen

In terms of taste, the pink oyster mushroom resembles its classic relative, but has a somewhat more intense and spicy aroma. The flesh is tender and fine-pored, with a pleasant mushroom flavor. In the kitchen, it is not only impressive in taste but also in appearance – the pink color remains partially intact after cooking, giving dishes a striking, appetizing look. It is particularly suitable for stir-fries and pan-fried dishes (sautéed briefly), for creamy sauces, and as a visual highlight on the plate.

Nutritional Values

Values per 100 g are not provided here — they fluctuate with variety, substrate, and harvest time and could only be verified through an analysis of our own product. However, a common misconception can be cleared up: A significant Vitamin D content in mushrooms only develops if they are exposed to UV light or sunlight during growth or after harvest – fresh mushrooms grown indoors therefore contain practically no usable Vitamin D.

Cultivation and Substrate

Cultivating the pink oyster mushroom requires a bit more experience than the classic oyster mushroom, but it is certainly doable for dedicated growers. The ideal temperature is higher, between 18 and 28 °C, which makes it ideal for summer cultivation or heated rooms. The humidity should be between 85 and 95 %, and sufficient air circulation is important. Various materials can be used for the substrate – straw, wood chips, and coffee grounds all work, although the substrate should always be very clean and well-sterilized. Colonization often proceeds faster in the heat (about 2 to 3 weeks).

Harvest

Harvesting is done, as with the classic oyster mushroom, by simply twisting it off at the base. The fruiting bodies are often somewhat more delicate than those of the oyster mushroom, so gentle handling is important. Tip: Those who want to preserve the strong coloration should harvest the mushrooms young, before they fade.

At Meisterpilze, we offer the pink oyster mushroom primarily during the warmer months when our growing conditions are optimal. At the Erlangen weekly market, the beautiful pink fruiting bodies are always a real eye-catcher and are very popular with chefs and mushroom lovers who enjoy experimenting with color.

⚠️ Safety Note – Mushroom Spores (Respiratory Tract)

When fruiting, mature oyster mushrooms – including the pink oyster mushroom – release spores. Please note the following information before cultivating (applies to any home cultivation as well as our grow kits).

Mature mushrooms release spores. Inhaling large amounts of spores can irritate the respiratory tract and lungs and, with repeated exposure, can trigger allergic reactions, including exogenous allergic alveolitis ("Mushroom Worker’s Lung").

  • Allow to fruit in well-ventilated rooms; do not place in bedrooms or living areas used for long periods.
  • Harvest mushrooms just before they release their spores to reduce the spore load.
  • Sensitive, allergic, or pre-existing individuals, as well as persons with constant exposure: Wear respiratory protection (FFP2/FFP3).
  • Never consume contaminated or moldy cultures; dispose of the bag closed and do not stir up/inhale spores while doing so.
