Mushrooms are true treasures of nature! They bring flavor and variety to your kitchen and impress with their intense aroma and special texture. If you’re like me, you love discovering new gourmet mushrooms and incorporating them into your dishes. But where and how do you find the best mushrooms? In this buying guide, I’ll take you on a journey through the world of gourmet mushrooms. Let’s get started!
Why buy gourmet mushrooms? A special kind of taste experience
Gourmet mushrooms are more than just simple edible mushrooms. They are distinguished by their intense flavor, unique texture, and versatile culinary applications. Whether in fine sauces, as a pizza topping, or in hearty stir-fry dishes – they add that certain something to every meal. Varieties such as the following are particularly popular:
- Shiitake – with a smoky, spicy aroma
- Oyster mushrooms – tender and mild
- King oyster mushrooms – firm and nutty in flavor
Edible mushrooms can be used in many different ways in the kitchen – from salads to hearty sauces.

Buying gourmet mushrooms: How to find good suppliers
If you want to buy gourmet mushrooms, quality is key. Freshness, origin, and sustainable cultivation play a major role. I recommend choosing regional suppliers. This way, you not only support the local economy but also receive fresh products with short transport distances. Here are my tips for shopping:
- Buy directly from the producer: Many mushroom growers sell their products directly. This allows you to check the quality yourself and often get tips on how to prepare them.
- Visit weekly markets: Regional markets are a great opportunity to discover fresh mushrooms and talk to the sellers.
- Use online shops: Specialized suppliers ship cultivation supplies and sometimes fresh mushrooms as well. Look for informative product descriptions, clear origin information, and customer reviews. If the cultivation method is important to you, ask the supplier how the mushrooms are grown—for example, whether they are grown without growth promoters and synthetic additives.
My tip – Meisterpilze (a word on our own behalf): At Meisterpilze, you will find sustainably grown edible mushrooms directly from the producer – harvest-fresh from Erlangen and without synthetic additives. In our online shop, you will also find everything you need for growing your own mushrooms, such as practical grow kits for home.
Fresh mushrooms are available on Saturdays at the Erlangen weekly market (9 a.m. – 1 p.m.) or via "Marktschwärmer" – not in the online shop. In the shop, you will find everything for growing your own mushrooms.

Proper storage of gourmet mushrooms
Fresh mushrooms are delicate. Proper storage is important to ensure they stay delicious for a long time. Here are my best tricks:
- Store in a cool, dry place: Ideally in the vegetable drawer of your refrigerator.
- Do not store in plastic: Mushrooms need air. It is better to use paper bags or a cotton cloth.
- Do not wash mushrooms before storage: Moisture encourages mold growth. Clean the mushrooms only shortly before preparation.
- Consume within 2–3 days: Fresh mushrooms taste best when you use them quickly.
With these tips, your gourmet mushrooms will stay crisp and aromatic.

Grow gourmet mushrooms yourself – it's that easy!
Did you know that you can easily grow many gourmet mushrooms at home? It’s fun and provides fresh mushrooms straight from your own cultivation. Grow kits that contain everything you need are particularly practical. Here is how you get started:
- Choose a grow kit for your favorite mushrooms, e.g., Shiitake or King oyster mushrooms.
- Place the kit in a bright location with indirect light (not in direct sunlight and not in complete darkness – light controls the formation of the fruiting bodies).
- Ensure fresh air, but avoid drafts, and keep the humidity high and constant – e.g., with a light cover or hood and by regular misting.
- After a few weeks, you can harvest your first mushrooms.
- Always follow the product-specific instructions that come with your grow kit.
This is a great project for anyone who enjoys experimenting and values sustainability. Plus, it is a lot of fun to watch the mushrooms develop!
⚠️ Safety notice – Mushroom spores (respiratory tract)
Mature mushrooms release spores. Inhaling large amounts of spores can irritate the airways and lungs and, with repeated exposure, trigger allergic reactions such as extrinsic allergic alveolitis ("Mushroom Worker’s Lung").
- Allow them to fruit in well-ventilated rooms; do not set them up in bedrooms or living areas.
- Harvest mushrooms just before they release their spores to reduce the spore load.
- Sensitive, allergic, or pre-existing individuals, as well as those with constant exposure: Wear respiratory protection (FFP2/FFP3).
- Never consume contaminated or moldy cultures; dispose of the bag while closed to avoid stirring up/inhaling spores.
Tips for preparing gourmet mushrooms
Now that you have your mushrooms, you naturally want to prepare them perfectly. Here are a few of my favorite tips:
- Sauté mushrooms gently: Use a little oil and fry the mushrooms over medium heat so that their aroma can unfold.
- Do not put too much in the pan at once: Otherwise, the mushrooms will boil rather than fry.
- Refine with herbs and garlic: This wonderfully enhances the flavor.
- Cook edible mushrooms thoroughly: Most gourmet mushrooms – including Shiitake and Oyster mushrooms – should be cooked or fried until done before consumption. Never eat Shiitake raw: Raw or insufficiently heated Shiitake can trigger so-called Shiitake dermatitis (a streaky skin rash).
- Button mushrooms in salads: Button mushrooms are occasionally eaten raw. Only use fresh, high-quality produce for this and enjoy them in moderation.
- Soups and sauces: Mushrooms give every sauce a hearty depth.
